    Potatoes are fairly low maintenance, can be grown in a pot or in the ground, last a fairly long time if stored properly, and can be very nutritious (high in potassium and vitamin C).

    Here’s more incentive: You can grow 100 pounds of potatoes in 4 sq. feet.
    According to  the Seattle Times, potatoes planted inside a box with this method can grow up to 100 pounds of potatoes in just 4 square feet. All that is required:

    1. Lumber
    2. Seed potatoes
    3. Soil
    4. Careful attention to watering

    Its important to remember to plant your potato-box not directly into sunlight and to monitor it time-to-time for little pests (rodents). This box is meant to have the bottom boards removed so that you can isolate each individual plant as it harvests. The best time to plant your potatoes and in general most plants is in May-July.
